No leftover chicken?
Using leftover chicken or a store bough rotisserie chicken reduces food waste while making this recipe super quick. Alternately this recipe can done in under thirty minutes even without leftover chicken when using boneless, skinless chicken. Coat pieces in Annie’s Organic Caesar Dressing. Then roast in a single layer on a parchment lined baking sheet in a 425 degree oven until evenly browned and cooked through, about 12-15 minutes, to make a quick roasted Caesar Chicken. This method also makes it easy to toast the pitas. When ready to serve, simply pop the pitas in the already-hot oven.

Customize it!
Inspired by classic cashew chicken salad this chicken wrap relies of cucumber, cashews and celery for crunch and arugula and caesar dressing for flavor. But feel free to mix it up with whatever vegetables, dressings and nuts you have in your kitchen! Bacon, avocado, tomato, lettuce and spinach are all great in chicken wraps.

What to serve with chicken wraps?
Because the wrap has the vegetable, carbs, sauce and protein all in one package there’s really no need to serve anything else. If you’re wanting more for your meal add chips, french fries, rice and/or sliced fresh fruit. And no matter what do not forget a side of dressing for dipping.
